If you have a juicer (insert San Francisco hippie joke), you’ve probably wondered what to do with all that leftover pulp. A quick Internet search suggests macaroons, which I made with carrot and beet pulp here. The beet ones have a bit of an earthy flavor, which is fine but not great. The carrot ones, however, are excellent! Used agave as a sweetener to make them vegan.
